Vanilla Sponge Cake

This is a basic vanilla sponge cake made in a Microwave oven.
Ingredients
1.    1 cup plain flour (maida)
2.    ½ tsp baking soda
3.    3 eggs
4.    ½ cup milk
5.    ½ cup powdered sugar
6.    1 tsp vanilla essence
7.    ½ cup melted butter/vegetable oil

Method
1.    Batter the eggs and mix it with milk and baking soda in a bowl and keep aside.
2.    Sieve the flour. Keep aside.
3.    Heat ¼ cup of water in a microwave safe bowl on high for 1 minute, add the melted butter and sugar and mix well.
4.    Add the flour, and the egg-milk-baking soda mixture prepared earlier, and vanilla essence and mix to make a smooth batter. Keep mixing till bubbles ooze out from the batter.
5.    Spoon the mixture into a greased bowl, microwave on high for 6-7 minutes.
6.    Allow the cake to stand for approx. 10 minutes. Unmould and enjoy the delicious cake.

Tip: In case you want to make it a chocolate sponge cake, add 2 tbsp of cocoa powder in the batter.
